In regard to measurements - I usually eyeball it. You will want to have equal amounts of pasta and spinach mixture. For two servings I did about one cup of penne and one cup of spinach.
Boil the desired amount of penne while you prepare your spinach mixture.
Steam the desired quantity of spinach and drain any extra liquids.
-Fresh is best BUT I have microwaved frozen spinach in a bowl with a plate as a lid.
Add around a handful of each of the following cheeses: ricotta, parmesan and mozzarella.
Season with about a teaspoon of sage and a dash of nutmeg.
Stir and pour the spinach mixture over the drained penne pasta.
Melt half a stick of butter, add a dash of sage and pour over the pasta mixture.
Stir and serve with pan seared chicken breast. I lightly oil the pan with olive oil and season the chicken with Goya Sazonador Total.
